Seasoned Sausage
It is a seasoned salami obtained from the lean parts of pork’s ham, spiced and cured according to the traditional recipe and using only natural guts.
The sausage of Basilicata or Lucanica derives from selected pork’s meat, locally raised and fed with natural products.
It is impossible to define only one recipe for the Lucanica because, as all traditional and homemade food, there are many different ways of producing it.
Lucanica is made of first quality meat (shoulder and neck) mixed with salt, pepper, fennel seed and red pepper in powder. This mixture is stuffed into an edible natural casing and put into wicker baskets for a night, the following day it is hung to dry 15 or 20 days. Lucanica, with its typical U-shape, is quite spicy and intense fragrant.
