The truffle in history
The truffle is a hearth’s fruit, it had been knowing for ancient times. The Greeks called it Hydnon (from which derives the terms “idnologia”, the science that deals with truffles) or Idra; the Latins called it Tuber, from verbs “tumere” (i.e. to swell).
The Sumers used the truffle mixing with barley, chickpeas, lentils and mustards. It is said that the Athenians adore it to the point that conferred the nationality to Cherippo’s sons only because they invented a new recipe with truffles.
Plinio the Old, as a naturalist, asserts that the truffle “is among those things that born but you can’t sow”. Plutarch said that “the Tuber” was born from the combined action of water, heat and lightnings.
Similar theories were at times shared others contested, however provoking long scientific diatribes around its origin. The popular beliefs, placed side by side by the uncertainty of the science of the time, contributed to increase the mystery of the truffle. Not being clear if it were a plant or an animal, it was defined as a degenerative bulge of the ground and straight devil’s or witches’ food.
For Truffles we intend the fruitful bodies of some hypogean mushrooms classified as Ascomycete, and characterized from the more or less globular and like a tuber shape.The size can change from that of a peanut to that of a great potato, moreover in some cases the form can also overcome the kilogram. The external part is named Peridio (or commonly called bark) and it can be more or less wrinkled or smooth, it depends on the type of ground in which it grows.The inside mass is named Gleba, it’s colouring changes from species to species.
