Cheese is produced throughout the world in wide-ranging flavors, textures, and forms. but our cheeses enclosing all the tastes of Basilicata region.As for dairy products, we generally refer to a series of fresh cow’s milk goods such as mozzarella (as small as a knot or a cherry), treccia, scamorza and burrata. It is generally difficult to export these goods, especially overseas, because they must be eaten in a very short time. Our company well tried the nitrogen deepfreezing (I.Q.F.) of these dairy products till we obtained excellent results in terms of fragrance and goodness. A suitable packaging and several shapes make now possible the carriage of these goods in the catering market.
Tricotta
This fresh cheese is produced with freshly-madericotta from buffalo milk and enriched with a delicious range of sweet and savoury flavours.

Burrata
Burrata is a dairy product which appears as a soft spun-curd pouch with a creamy filling of mozzarella strips and cream.
It usually has a mild flavour and is used mainly as a table product. In addition to a traditional style, our Burrata comes in several flavor combinations:

It’s a mozzarella tied in a knot, whose paste is slightly thready and savoury.

Treccia
Treccia is a fresh cheese ‘a pasta filata’, too, with a smooth surface and a thick, ivory white paste.

Quadrifoglio
It is a product which is very similar to mozzarella, but whose typical shape reminds a four-leaf clover, hence the name “quadrifoglio”.

Buffalo Mozzarella
The mozzarella of buffalo’s milk is a fresh table stretched curd cheese. It has a glazed white colour and its rind is fine with smooth and pearly surface.
The internal structure of the past is at fine leaf, that tends to disappear towards the centre.
The mozzarella present to the palate a characteristic and delicate aroma, thanks to the particular taste of the buffalo’s milk.
