Sweet Capocollo from San Giorgio Lucano village
Capocollo, capicollo or coppa is obtained from pork shoulder and neck, (the name capocollo comes from capo/head and collo/neck)
The meat is salted, massaged (this is important to assure an uniform salting process) stuffed into an edible natural casing and cured. During the production the meat is mixed with a variety of typical herbs and spices.
